Ham & Split Pea Soup

Ingredients:
Leftover Easter Ham (with bone)
Onions
Garlic
Carrots
Celery
Potatoes
Fresh Thyme
Bay Leaves
Water
Black Pepper to taste
Fresh parsley

Dump everything in the slow cooker. Cover with water. Set on low for 8 hours. After 8 hrs, remove thyme, bay leaves. Remove ham bone and shred meat. Use blending stick to purée soup. Add black pepper to taste. Add back meat. Serve with fresh parsley and crusty bread.

Pho Bo (Vietnamese Beef Noodle Soup)

Beef Pho usually takes 7-8 hours to cook. If you use the instant pot, it significantly cuts down cooking time to 1.5 hours. The meat is fall off the bone tender and the broth flavorful. It’s easy and ready in no time.

Summer appetizer - vegan stuffed zucchini blossoms. Delish with a squeeze of fresh lemon! They don’t look that great in the photo. This was my first try and not completely successful. I tried to use a small amount of oil instead of deep frying and the few others that I made stuck to the pan a bit and were not photo worthy. I don’t fry much , so will need to try again. Still tasted great!

Meatball Marinara Submarine Sandwich

Husband wanted a Subway meatball marinara sandwich so I made it for him.

I slow cooked the meatballs in marinara sauce for 6 hours. Topped with provolone cheese, Parmesan, fresh Basil, and banana peppers.

Greek Yogurt Pancakes

These pancakes are delicate on the inside with crispy edges thanks to the coconut oil.

Ingredients:

2 eggs
4tbs of milk
2/3 cup of Greek yogurt
1/2 tsp vanilla
1tbs sugar
1tsp baking powder
3/4 cup AP flour
Coconut oil

1. Mix wet ingredients except coconut oil.

2. Add dry ingredients

3. Mix until just combined

4. Coat griddle with coconut oil

5. Pour 1/4 cup of batter.

6. Flip when golden brown in bottom. Cook other side for 2 more minutes

Is carbon steel supposed to look like this? I’ve seasoned, reseasoned, wash with mild soap and water, dry it over the stove, avoid cooking acidic foods in it and it still looks like this. It used to be way blotchy before but it has gotten darker on the bottom and has gradually moved its way up.

I don’t know if I’m doing it right. I’m used to the black patina of cast iron.
