It’s too bad you don’t feel like you have some associates you can speak to generally about law school, practice, etc. Keep an eye out for the lawyers who seem to come knocking at your door first—decent odds they are happy with your work and would be willing to chat.
That said, being a paralegal in biglaw is a way for you to preview your possible future, but there is effectively zero reason to go “above and beyond.” Just do solid work on time and be available. Law school recs from lawyers tend to be worth far less than recs from undergrad professors who knew you well and can speak to your academic ability. The admissions offices aren’t going to think you’re the next Marty Lipton based on the work that’s usually asked of paralegals.

To answer your question, pride in your work, the opportunity to get to do more interesting work, and just generally learning more about how to do your job well. Don't burn yourself out, but I wouldn't treat it like a 9 to 5 job manning the desk at your college library or something. It's always good to have a good reputation, even if it's not immediately obvious how that might end up paying off.
Also, most attorneys are too busy / don't think to offer, but I have offered to help people with law school applications, etc. based on them doing good work for me.
