One of the HR assistants overheard my conversation with the coworker and said "you know we hear she destroys the bathroom every time she uses it." How is this a problem relevant for me to handle???

Giving her the benefit of the doubt, it sounds like she may be dealing with some medical issues. If that’s the case, though, she needs to go through the accommodation request process with HR. I’m unclear from your title whether you’re in HR or just a coworker. If you are HR then the person bringing it up to you should start the interactive process. If you’re not HR, it probably makes sense to refer the person there.
I don't think it matters if you're in HR or not, that is beyond your obligations. Have them figure it out on their own. They're old enough. You don't have to baby them.

This is a great time to practice saying “no”.
“No, I won’t be taking this on today.”
This happens at every place I have worked at honestly. There are always people who don't want to act like adults. And one thing I have learned is that you can't make the adults, act like adults.
No seriously. She needs to figure it out. If she doesn’t want to use the bathroom, she should go into a nearby public restroom, custodians are doing their job. If she can’t oblige, I would encourage a doctor visit

Really? I mean I understand that she may be going through some medical issues but do I really have to think about your asthma and how a bathroom can properly cater to your needs? Of all the things I've been stressing about lately? That's a you problem.

I worked in a place where they had scent free section which I had no idea. A worker file a grievance against me because my shampoo or conditioner scent was too strong🤷🏻♀️I was asked to change brand, having curly hair I have no choice to use conditioner to untangle my hair. Also very difficult to find scent free shampoo. Some had serious allergies to certain chemicals. They had some kind of accommodation. I had to find ways not to come close around that area and go through a different building and sets of stairs to be able to go meet my clients located in the same building as the scent sensitive employees. I also asked my clients to meet me else where to avoid more issues
That's crazy that you were asked to find scent-free shampoo and have to move all your clients to accommodate the scent-sensitive employees. I have curly hair so I know how hard it is to find shampoo and conditioner for our unruly hair.
That's no longer your concern, OP. Let her use her common sense, if she has. Lol
