Joe Beef. Also Schwartz’s for a smoked meet plate, half sour and a cherry soda. Best meal in town.
A classic Portuguese for seafood is Ferreira in the business district. Europea is a great fusion experience for a long meal (up to 8 services). Outside of the downtown core, Damas is a great Syrian restaurant. Le Filet, for the best meat. Milos for best Greek/Mediterranean In old port and for Quebec/French cuisine, Le club Chasse et Pêche is the place to go.
Even if you do high end, don't miss the more casual and liver killer Pied de cochon and the after-party, La Banquise, for poutine.
I’ve always liked Stash Cafe in old Montreal. Polish food with a set menu, has a great atmosphere (church pews for seats, piano player in the background). It’s not a large space though, I’d say a party of 4-6 max is what I would bring there.
It’s not really “high end” but the food and atmosphere are great which is what I look for primarily in a good restaurant.

Au Pied de Cochon is soooo good +1. Such a memorable meal
When are you going? About 45-min outside the city is a world class sugar shack. I take a small group of friends here annually. Need reservations in advance. Note they have a downtown restaurant it this is the shack outside the city. https://aupieddecochon.ca/en/

Big fan of Au Pied de Cochon. Not for the faint of heart though - all the pig and duck fat you can imagine
The name is literally pig foot but it’s so worth it
Avoid Joe Beef like the plague. It puts the trap in tourist trap.
