Google Chili by George. Freezes well. I reheat it with a little bit of tomato sauce to get the texture back. If you don’t want to eat beef, Turkey is an option.

Sweet potato soup. Microwave 2 sweet potatoes, scoop out the insides, boil with equal parts coconut milk and broth (or water), season with a few tablespoons of Thai curry paste and a few very large spoonfuls of peanut butter (I prefer chunky for the texture), plus anything else you like: I usually add a bit of soy sauce, fish sauce, and/or brown sugar.

Whole thing takes like fifteen minutes (usually you need to microwave the potatoes for 8 minutes) and it keeps for a while.

Chicken and a jar of salsa in the slow cooker or Instant Pot, w rice and a salad.

Stir fried rice. Use any variant of frozen veg, cooled rice, olive oil and some seasoning. Refrigerates (2-4 days) and freezes (a few weeks) well.

Budgetbytes has tons of great recipes. Love them.

My go-tos aren't super easy, but really good and can be frozen in individual portions if you refrigerate after making and then slice and freeze. I believe in cooking big batches of stuff I really like. 1. Lasagna. Yes, it's a pain to make, but you can get about 9 good-sized meals out of one 9x13 pan. 2. Quiche. One cup of sour cream + 5-6 eggs makes a fool-proof base to add cheese and fillings. 3. Shepherd's pie. 4. Most crockpot soups can also be frozen in individual servings.

The business owes you nothing and life is not fair. Stop complaining about who’s doing what, ranks, who’s voting for who, who likes you and who doesn’t, benefits at other firm compared to yours, this right and that right and ask yourself the last time you HELP yourself. I lost my job and have a one year old. I love taking care of the baby and my whole day goes in that!! It really does. I have not been able to think about other job options but I really want to apply and find a job. What do I do? Due to corona we are skeptic bout day cares too. I do not want to lose my skill set, been in consulting for 12 yrs. And at the same time love the time that I spend with my baby. What is the right thing to do? I really need to get a fresh perspective and some inspiration.
