D1, those aren't "hidden" gems, they're 100+ Yelp 4 star reviews. OP, the bars east of I-35 are cool as shit. The Mexican bars, the hipster bars, the country bars, all of them. That's said, you're not wrong about them being great places.
Rainey St is pretty mainstream but off the main drag, Alamo Drafthouse for a movie, Uchi/Uchiko for Japanese, go to the OG Whole Foods on S Lamar, Magnolia in SoCo for Tex-mex, HOPE outdoor gallery (graffiti area), Kerbey Lane for queso 24hrs, Midnight Cowboy (book online, ex massage parlor turned bar)
S1, point taken, still well worth a visit
If you will have a car, drive to Mt. Bonnell. On the way stop at Mozarts cafe, great coffee, nice view. You'll drive through a really cute neighborhood called Tarrytown, we really enjoyed looking at all the nice houses. It takes maybe 20 minutes to get to Mt. Bonnell, but you can walk around a bit with great views of the river and massive houses. Fun little adventure that me and the SO enjoyed :)

Try Iron Works BBQ downtown near Four Seasons. Excellent.
