Any tips for a healthy vegan diet. I went vegan a month ago for health and ethical reasons and I just wanted to know if there is anyway I can meal prep without my meals becoming repetitive.

Find and follow Instagram folks who are vegan for inspiration; oh she glows is one that comes to mind, but I’m sure there are others.

Buy cookbooks. My personal favorite chefs that have multiple books published: Bryant Terry, Timothy Pakron, Gaz Oakley and although not entirely vegan cookbooks these chefs also have about half their books vegan and more importantly very healthy, Gregory Gourdet and Gwyneth Paltrow (I realize that last one is weird but her books are really good).

I like meal prepping by making individual ingredients that can be mixed and matched. So I’ll cook up maybe a couple grains (quinoa, farro), a couple proteins (tofu, beans), and a few veggies (steamed broccoli, roasted sweet potato, roasted asparagus). And then put them together and season them in different ways throughout the week.

Lots of veggies, try and eat more colors everyday. Meat meal prep is more repetitive

Oh She Glows is by far my favorite cook book/blogger and I’m not even vegan. A wide variety of plant based recipes - all super flavorful and delicious

I don't have anymore suggestions to add. However, I went vegan two years ago. I still eat meat once per month. It was an amazing decision and it's very easy to adapt to. At no point have I felt like I've been missing out, and I still get to enjoy ribs, steaks, and such once per month. Good luck!

Please take this in the nicest way possible. It’s great that you’ve added more plants to your diet, but you are not “Vegan”. Veganism is a philosophy and way of life to not contribute to animal suffering (i.e., not buying leather). If you still eat meat, you are “Plant Based”. It may seem silly but it can hurt the movement and confuse others.

Mandating health care for teachers...where will it stop? Once government starts mandating an area of our lives they rarely ever back off...they double down and mandate more...so again...where will it stop? Here is a for instance...if we look at days missed then pregnancy is certainly a huge factor...when will the State start mandating birth control for teachers or write contracts that births be scheduled during summer vacation time so as to not negatively impact the continuity in the classroom

It's been around 14 weeks since I filed my tax returns along with a new ITIN application for my wife through an in person appointment at the local Chicago office. My husband and I (both 27) max out our Roth IRAs each year, have a complete emergency fund, and I’m able to start maxing my 401K this year (he contributes 10% to his 401K - it isn’t possible for him to max his based on his current pay). We contribute 18% extra towards principal on our mortgage each month. We now have about $20k of additional savings we want to figure out what to do with. What would you recommend to someone who is new to stocks/investments?
