Don't plan on skiing around Christmas. Way too early in the season & you'll be lucky if you can find 5 open trails on any mountain. Source: lived in Europe for 3 years & attempted 3 ski trips to diff mountains around that time.
I've been skiing there a few times. Usually in February. Awesome time and a hell of a lot cheaper (3-5 day pass for <250€).
Didn't ski, but the Christmas Markets are fun and festive, definitely a merit to Europe in the winter
Used to live in CH (but 10+ years ago, so may be out of date). December is a little early, but most of the larger resorts have snow machines anyway. Some Swiss are skiing, but it's a lot of tourists. We tried to avoid some of the crowds by skipping Zermatt, Davos- preferred Flims/Laax/Valera. (Flims has a great sledding course if skiing is not great.) Near Zurich is Hoch-Ybrig- smaller but locals only.
I'd check out either Scandinavia or Macedonia. Less of a crowd, but great slopes and good après-ski

There's a couple of snow consistent resorts in Austria, Hochgurgl and Ischgl are awesome even in years with little snow. Also a fraction of the cost you pay in the US.
