I work up at Los Alamos pretty often and there is a burrito in Santa Fe that is so friking good, (and I’m a Texan so those are fighting words). It’s called the Pantry and it’s a nondescript little place but clean and roomy enough for an infant. *Brisket burrito with red sauce.* You are welcome.
I would not turn down their desserts either— made in house is always a good sign— it’s sort of whatever’s left that day but there’s usually a tres leches cake that’s good.
Meow Wolf is also cool. An older infant might actually dig some of the bright funky exhibits before their afternoon stroller nap.
I agree that meow Wolf is a lot of fun, but an infant might be too young. There’s a lot of walking around and going up and downstairs, etc. Ojo Caliente Hot Springs is really cool, not sure if you can just chill out there with an infant or if they would be unwelcome.
Rising Star
Unique part of the country. Absolutely worth visiting. No harder than anywhere else with a kid. Winter is cold!!! And dry. And also cedar pollen is nuts in the winter. But the smell of local pinyon wood burning from all the chimneys is delicious. As are the chiliqueles.
1000% yes I had no idea about the cedar until I nearly scratched my clothes off in a meeting. Pack your super meds.
I went to Santa Fe (and Taos for a day) this past summer and loved it!! I hired a guide to take me to pedregal, the mountain that inspired Georgia okeefe. (I can def give you his name.) it’s not well marked and is a little challenging so don’t know if i recommend it sans guide although you did say that you’re outdoorsy. Food wise, i loved Zacatlán, paper dosa, and Paloma, all in Santa Fe. Check out meow wolf and the Georgia okeefe museum. Also, i stayed at hotel Santa Fe and really liked it. In Taos, go to the gorge, mountain, and earth ships.

Los Alamos is beautiful and Bandolier is worth a visit! Some cool museums around the Los Alamos labs and nuclear program if that's your gig.
For some scenic driving, if weather is permitting, take the ow road to Taos and high road back from Taos to SF. Some gorgeous views. Rancho Chimayo on the road is supposed to be amazing, but was too busy when I tried to stop by. I really enjoyed Taos Mesa Brewing when I was in town. There's a Rio Grande gorge bridge which was amazing but not for the faint of heart and probably not great for little ones.
Lots of great art and food in Santa Fe! Loved Harry's Roadhouse for dinner and Cafe Fina for brek. If you're not from the area, get some green Chile - you won't be disappointed!
Taos Pueblo is supposed to be awesome but was closed due to covid when I was there
