Anyone have a nice standard email they use to ask opposing counsel if they’d be open to mediation? I always worry I’m being too short or long-winded. Can’t seem to find a happy medium.

Does your court require settlement conferences or mediation? If so, email and ask when they're available to schedule it.

If not, then I would consider writing "Hi, Jane. Thanks for [whatever you can thank her for]. Has your client given any thought to mediating this case? We've had some success with similar matters in the past, and it seems like something that would make sense here. If you're interested, let me know and we can work out the details. Hope you have a nice Thanksgiving."

Novel concept: get them on the phone pretending to talk about something pending about the case and at some point inquire why this case hasn’t gone to mediation yet.

I have an offer from HR who insists that office isn't gonna open anytime soon but not ready to give anything in writing. Just got off of an interview for inhouse. Seems like you do everything every area of law imaginable and with little to no support staff. And no other associates. Just you and someone more senior. Seems like so much work and no billable but it would come out to 2100+
