Honestly I wouldn’t place your bets on the formal mentorship program. Even if you find the time to meet with your assigned mentor, there’s a solid chance that whoever the firm paired you with isn’t the right “fit” (for whatever reason). I have found in my experience that I have had better luck and better connections with people I’ve developed informal mentorship relationships organically (although it does take time)
Try to grab coffee with people when possible and build relationships that way. Someone will eventually become an informal mentor. The best mentorships tend to develop naturally over time. While in biglaw I had a series of subpar mentors who sound much like yours. My attempts to connect and bridge clear gaps proved a waste of time. Sometimes you just don’t click with certain people. Try working for different people, find the ones you like, stop by their offices and take them to coffee and volunteer to help them all the time. In a year or so you will have your mentors.
