I went last year in early January and there were still some ice on hiking trails in Sedona. I recommend Boynton Canyon and the Goldfield Ghost Town outside of Phoenix. There weren’t that many people in both Phoenix/Sedona so that was really nice!
I was there this past January! The sun being out kept the weather pretty nice during the day, and even in the evening in Phoenix the weather was bearable, especially if you’re somewhere with heaters outside. Sedona is a beautiful place, but definitely stick to the outdoorsy stuff. The town itself feels like it’s geared toward retirees. I would also highly recommend heading out to Jerome, about 45 minutes southwest of Sedona and sort of on the way to Phoenix. It’s a really cool old mining town that has turned into an artist town, really cool shops and some good restaurants too. Didn’t spend a ton of time in Phoenix, but I was able to go for a run in shorts and a t shirt the morning I was there.
I just visited Sedona with a couple friends. We did a super easy/short hike to Buddha Beach, a river you can swim in— it might be too chilly to swim in January, but a scenic walk nonetheless. We also got a Groupon for Red Rock Western Jeep Tours which was significantly less expensive than the pink jeeps and totally worth the $$$. There are a ton of restaurants/shops in downtown Sedona.
