Agree with EY1. You could also reach out and let them know your situation and see if they could postpone your start date. You could stay at your current company, take paternal leave and in your paternal leave submit your 2 weeks and then start your new job
I would be honest with them and let them know exactly why you need to push your date back. I think if they are a big company with multiple positions at the level you’re looking for, there is a good chance there will be an opening in November. If not, I would start interviewing at a later date, parental leave is too good a perk to give up and all company policies are different

State law might override some firm policies. I know NY and NJ for example have very clear rules on this that allow for paternity leave. Unsure of the 12 month minimum. If the firms really like you, then start date negotiation might be possible and you begin after your paternity leave.
Yes. In NY you can take it after working for 26 weeks for that employer full time. However that's just for job protection benefits and payment from the NY Paid Family Leave program (which this year is a weekly benefit of 67% of weekly wages, $971.61 max).
However keep in mind you would be unpaid from the firm during this time. You can't double dip, and if your employer has other benefits (eg, fully paid up to 16 weeks) with a minimum service period you still wouldn't be eligible for those.
In NY it doesn't override the firm policy, it's a separate benefit funded through NY disability insurance (which means a third party pays you - you'll have to pay for medical, etc. To your employer if your eligible for benefits during this unpaid period).

My wife had a baby 8 months after I jumped to EY and I was told I didn’t qualify for paternity leave since I hadn’t hit my year mark.
Officially the policy goes by date of the child's arrival, not when you apply for the leave.

In my experience yes,most require a year of service for paid parental leave.
At Baker Tilly you would qualify for maternity leave right away. It takes a year for FMLA qualification, but 12 weeks paid maternity leave is immediate.
