Sometimes you have to manage up. Ask your supervisor how they want to stay informed, perhaps it’s a shared doc where you briefly state what you’re focusing on, biggest win and difficulties in the past week, perhaps it’s a Slack message every Monday… different people communicate more efficiently in different ways.
Do you have regular 1:1s? I would follow up on these in those. Make sure you’re on the same page about what progress looks like.
OP, have you considered leveraging the 1:1s to incrementally update your manager? I like to use a living document where I keep my accomplishments, and add a page break with date stamp from when I updated manager. This way they can skim for newest info whenever they want, and you can keep all your stuff organized so it's easier to present during meetings.
If you’re doing a bunch of stuff that your manager doesn’t know about, should you be doing them? Do they contribute to your team/group/department/company goals? Or are you doing them because of poor or ineffective tools or processes? This may be an opportunity to reduce tour workload and focus your efforts more on the priority items tour manager has assigned to you or to implement or lead some process improvements.
