I used the osprey Fairview 40L for 8 months. Depends on how low/high maintenance you are.
It will depend on where you are backpacking. If you stay in, let's say, the mountain, it can get chilly specifically the night and morning and you will need to bring some warmer clothes.
I have a backpack that I use for any kind of trip I'm doing. It's a 70L from Decathlon, but it can be small enough that I use it as carry-on luggage when I'm traveling by plane. It was very useful when I backpacked from Germany to Thailand during the winter, going from -30 degrees celsius in Russia to +30 in Thailand. I had enough space to keep my winter jacket and other warm gears in the bag.
But for a 4 weeks backpacking in Europe I would take 5 or 7 days of underwears, 3 or 4 TShirts, one shorts and one pair of trousers, one sweatshirt (in case it gets chill) my hoodie and a jacket.
40L is more than enough. Depending also where you go. If you vary from Greece to Lapland, you might need a bigger backpack
