Stuff inside the walls are typically always better by the builder so you don’t need to break stuff later.
My suggestions:
1) upgraded electrical service (larger load center, structured wiring, etc)
2) Ethernet wiring EVERYWHERE
3) prewire for electric vehicle chargers for each garage parking space
4) wiring conduit to roof ( for potential future solar)
5) better insulation for the house (avoid spray foam if possible because if they mess up the chemical mix your house becomes uninhabitable)
6) whole house water filter
7) backup sump pump
8) whole house generator
Sorry almost forgot if it is an option try and get a zoned or split HVAC system. Will maintain the home temperature significantly better by heating or cooling only those areas that need it

It all depends on builder. I’ve seen wildly different prices. I’ve seen some decent prices on blinds or window treatments.
Kitchen hardware like knobs tends to be overpriced. And wood stairs. I’ve done that after market before.
Lighting may run extra but just do it. Not worth hassle and mess afterwards.
Hardwood flooring. Upgraded padding and carpets. Spend money on the kitchen. You want it all covered under the builders warranty. Of course, based on prices..
This is my first home as an immigrant and looking to keep costs down, upgrades are expensive but I am not sure what all things can be done easily afterwards. For example, builder is charging a lot for fan prewiring for multiple rooms, light switches, Christmas light package etc. I am not sure whether I should get it done myself once I move or get it done from builder
Probably where they put outlets by all the windows and selectively outside to accommodate Christmas lights
