Spend 5k on a 20 year old Camry and 30k on a 997.1 911.
Best of both worlds: there are some 3 Series wagons on the CPO page. And they have the benefit of holding their value better due to rarity.
Cadillac CTS-V Wagon. Seriously best of all worlds. Downside is they are already appreciating. Upside is it kept well they’ll hold value. Not sure about maintaining but should be ok-ish.
Look at a Mazda CX-5. It's the best handling SUV on the market. Full stop. Now, the older 2.5L engine without the turbo is maybe a little underpowered, but the handling and ride make up for that. (The turbo in the current model actually has more HP than an Audi Q5, and it's excellent.)
I love my CX-5. It's so much fun to drive, but very convenient for road trips. With COVID, road trips are all I am taking for a while, so the extra space is very handy.
Looking at your list of possibles, I would skip the Acura MDX (big 3-row family car) and look at an RDX. It's smaller and pretty nimble. Lots of newer ones around at good prices because they did a new generation in 2019.

No more than $35k but less is better 😛 I’m aiming towards a happy medium between the worst and best of those
