Is it a good idea to vent out (in a professional tone) to your manager/HR during your exit interview? Especially, if you had a bad experience with and found your company's work environment to be very toxic and you were on the receiving end of micromanagement and intimidations from your delivery managers for no reason. It is my first exit interview so I need some tips.

I am a java developer and I am making a switch and joining a product-based company in July. I am scared that the knowledge and experience i had at Infosys will not be enough to be able to work effectively at new firm given I have 7+ yrs of experience.
I am scared what if I get fired for not performing up to the mark.
I had theoretical knowledge of few java frameworks and no real project experience, but i didn't mention that in the interview. Would that backfire?
Please guide me.
