I’ve seen this happen and honestly the best approach is just being upfront, apologize and provide some kind of reasoning. Explain you were looking forward to working with X but this was just a better fit because Y.
No one is going to like it but it is what it is. Do what’s best for you but do it in the most professional way.

This. It's going to suck to tell them since they'll be pissed, but just be straight with them as to why and that you weren't shopping their offer if that's true. You'll likely burn that bridge, but presumably the next offer is good enough to make that worth it.
I backed out of a firm a week before I started 6 months after I accepted the offer (I was a federal clerk). The second option came from friend connections and I never really formally interviewed it was a very weird experience. I emailed the recruiter and the bead of HR. A week later I got the absolute nastiest email from one of the partners at the firm I backed out of. And I mean nasty. Saying I have no integrity and ruined my career and was a horrible human. I didn’t even finish reading the email. Let me just tell you—that’s all the confirmation I needed that I made the right chose with the second firm. Just send an email and be done with it.

A2 that's pretty awful. The fact a partner will even go out of their way to send this says a lot about them. Most of them would never take the time to send the email themselves

I know someone who started at a firm as a lateral, then got a different offer and quit about 1.5 weeks in. If you’re potentially looking at something like this, I’d at least try to delay the start date at the other firm if you can. They won’t be thrilled about you reneging either way, but better than starting.
Just work both man.

It's called reneging. That's the situation. And yes, you would tell the first firm (with apologies) that you will no longer be joining them because you have decided to pursue another opportunity.
