Interest, then inside each interest they're also organized by level. This way everyone can find something they're interested in at the level they're reading at without going through the entire library. Works for me!

Wow! That sounds like a lot of work.
A few years ago our district started using the Accelerated Reader program, so I tried organizing my library according to their levels along with Guided Reading levels. It was a huge project which my IA spent a lot of time on. Not all books fit into those categories, however, and it’s hard to keep it up, especially since I haven’t had a consistent IA since then. 🤷🏻♀️
I organize by topic and have color coded stickers for levels. Kiddos know their color and use this during guided reading/decodable reading but are allowed to pick other colors during certain parts of the day.
I organize by reading unit. I organize by reading unit in our Wonders program. We spend about a month in each unit so my students have time to enjoy the books for some time.

I do both in my classroom.
I have mine done so that the students will know which books are Reading Counts books and which are just interest books.
I am impressed by you all. My classroom library has books but they are not organized by anything. However, I do find that most books are online and much easier to navigate by level and interest than classroom books. Also, as we are a one to one school, students can find these books with the assistance of myself and no one needs to know what their level or interest are if they do not want them to.
