Sterne Kessler and Wolf Greenfield are great firms but have less of an entrenched Big Law culture. I have worked with Wolf Greenfield to handle IPRs for district court litigation we were handling and they are some smart folks.
Fish despite marketing itself as an IP boutique still has the culture much closer to a big law firm. I did not realize MoFo even had technical advisors.
At all of these firms I believe many of the tech advisors are also patent agents. Even if you do not plan to use the patent agent credential (i.e. only work in a litigation support role) it is a good way to signal your value in these roles and will increase your compensation.

I’m a tech spec and patent agent at fish and love it. I cannot comment on the other firms you mention since I have not worked for them. The partners I work for at fish are great and there is plenty of work. Feel free to AMA or DM me if you want.
Also just saw you are at University of Minnesota. If you work in tech transfer I suspect you already had a chance to work with Wolf Greenfield as I believe they did patent enforcement work for UMN. They do decent work for a smaller shop.
