Speaking for the Dutch practice (I realize you are probably US-based): If you're at the lower levels (C or SC) it's very easy to move around domains or combine different types of projects. More specialism is expected later
In practice it depends on the projects available and the people you connect with, but if you make sure the right people can find you it's not hard at all.

I was staffed at one client for 2.5 years at EY, and currently at a client for a year with another two years of signed work. Cyber projects can definitely be long term...
Curious what type of project those are? Staff Aug? Managed Service?

Their cyber practice is much larger than EYs so I’m guessing they want specialists vs. generalists

That's true op. But you can talk to different group partner and move across. I have seen few people who have done that.

I’m in advisory, yes. Just want to work outside of my speciality to gain a more holistic understanding. I like diversity. Don’t think EY can do that with their business model?

We look for people based on their skills / knowledge as opposed to their alignment
In my experience at Deloitte, the cyber business model and the way projects are sold don’t really allow for this. There are other ways of doing this (practice development, cross-project gigs) but they are always second priority to your primary client project(s). I suppose you can be more flexible and do more of what you want at SM and above levels
In my experience I've switched between different groups in cyber. It's a matter of voicing what you want without upsetting people. Remember that it's not all about you getting to do what you want but more so where you add value to the firm.
With that said, cyber projects are not terribly long so have conversations with your SM/M about exploring other opportunities. If they're a good manager they'll understand and if not then that's more of a reason to get off that project!
