I'm a pretty positive and outgoing person at work. My coworker, 40s male & 15 years at the company, is really negative and condescending in the way he speaks. Usually inserting into every conversation and meeting, "I'm not saying this to make you feel dumb...", "Interesting thought/ idea, but that that's probably not going to be liked by leadership...", "Let me explain this as simple as possible, not to seem stupid...", etc. How do I continue to be myself and maintain sanity in this situation?

In which phase your project is currently into? Did your client usually worked with less resources than required? Get the bigger picture, things like these in one project can't be generalized.
What if the client itself doesn't wanna spend much?
Project is in blueprint phase but there isn't scope of onboarding more resources. Talked to project manager on this.
It's obvious that client wants to work with less resources. This again comes from Nagarro's quote to client.
Client itself doesn't wanna spend much? What does that mean? Does Nagarro bags all the small budget projects and overload their resources.
I know it can't be generalized, but from few I've met, it's the same case. Atleast in SAP stack

Projects vary in size. Sometimes projects that are starting as prototype for a new breakthrough idea will have smaller teams. Usually such projects are challenging in my experience

It is partly true and happened to me too. There are lots of good things in Nagarro but project allocation and execution is not the best in all projects.
