If they are going to nickel and dime you for some material and not other, you need them to have it in writing before starting work
I would push back against the drywall and say that it should be part of the initial estimate.
Depends on his original bid and how they handle change orders or incidentals or discoveries. In the future, make sure bids have as much information laid out in the scope of the project.
It comes down to the contract and estimate you received. Before you kick off a project there should be a discussion on what is included and reimbursables, the process/timeline etc. Unless this is for work on something discovered during construction that caused additional cost I dont understand why its just now being discussed.
