We dropped it cold Turkey and I never added in a pump session or had an issue with supply. I was extra full in the morning for a couple of days, but your body is pretty smart to realize less milk at night and more milk in the daytime.
Your main goal is to shift when they eat, but keep overall volume consumed the same.
Have a clock visible in baby’s room. For a few nights, write down when you feed and for how long. When you’re ready, start shortening the feeds by a minute every other night or so. Once I got down to 3-4 min, it only took a day or so to stop entirely.
Also, the above is for night weaning (ie baby wakes and demand feeding) and is a first step before actual sleep training. It’s essentially the TBC method. If what you’re talking about is a true dream feed and baby never wakes up...try going cold turkey. The dream feed might already be more about your routine than baby’s need. Or try method above if you’re nervous.

I did the is exact approach and it worked great for night weaning. I actually kept the dream feed until 9 months though to help with my supply because then I could have 3 feeds on the breast and 3 pumps in office on weekdays.
Move the time earlier and earlier and duration shorter and shorter. Will need to pump to maintain supply once that session is significantly shortened, but if baby no longer needs the dream feed you might not need the supply and can decide the approach to pump/not pump accordingly.

Do you use a bottle already? Is it possible to pump just before you feed, and then give baby the pumped milk from a bottle? The purpose being you can then slowly decrease the amount you give baby via a bottle, as well as have a little relief for your breasts if you happen to get uncomfortable while your body gets used to shifting when baby needs the milk.

I am worried about the supply and not feeding/pumping until the morning. Granted it would be nice to enjoy a large glass of wine at night vs pumping before bed ;)
