Chinese stir fried veggies all the way!! You can sauté pretty much any vegetables. Never takes longer than 20 min (usually takes less than 10) and they taste so much better than raw salads
Italian - Pasta with chicken (Alfredo, Marinara, Pesto sauce), spaghetti
Mexican - Burrito bowl, Tacos
Pre-packaged meals - try Bison burger, high in protein
Some of my favorites I keep in my rotation:
- Ground turkey tacos/burritos (using a low carb wrap, and fat free/low fat cheese for better cals)
- BBQ pulled chicken sandwich (use a lower cal BBQ sauce and buns if you want more volume of food)
- Fresh lemon garlic chicken breast with rice and any veggies you like (simple but beautiful)
- Mix ground beef/turkey (seasoned with taco seasoning), white rice, fat free/low fat cheese, and a crumbled up taco shell in a bowl 🥣
Get the $5 roasted chicken at Costco and make Waldorf chicken salad (sub Greek yogurt for mayo), make shredded bbq chicken salad, chicken/rice/broccoli...possibilities are endless! (Unless you don't like chicken 😅)
Chop up a potato/sweet potato, some veggies, chicken, etc. Add salt and pepper, garlic, onion powder, any seasonings that sound good to you and toss with olive oil. Then roast in the oven on a sheet pan.
Pro
I buy frozen mixed vegetables and when I don’t have time, I just mix them with cooked rice to make fried rice. For protein, add in canned garbanzo beans.
