Protein packed lunch
Spring dinner - vegan lemon asparagus orzo with pan sautéed marinated seitan and cherry tomatoes. Got the first local (east coast) asparagus of the spring. Orzo based on this recipe: https://www.peacefuldumpling.com/recipe/vegan-creamy-lemon-asparagus-orzo I used chickpea orzo and Violife vegan parmesan.

I used puff pastry sheets and cut them in round shapes that can fit into a small muffin pan. Then mix eggs with sugar and evaporated milk and filter a couple of times. Fill the pastry sheets with the egg mixture and bake for 25 minutes in 400 degrees
Either way, a great option.
