Huzzah! Thanks to the SO and advice on here, we made some budgetary changes and I was able to reduce the budget range by $400-600. Had to sacrifice a day in Barca to do so buuut it’ll be worth it to enjoy El Clasico and not be stressed catching the flight home. Crisis averted 😅🙈
Edit: also now that I reread the post and after doing some research last night, the trip was only like $700-1000 over what’s typical (though still much higher than what we’d like to spend) so the reduction was actually impactful haha. Just forgot how much it is to travel to W. Europe for 2 weeks, esp. during covid.
Just went to Spain- all seats on Iberia (including basic economy) are fully refundable via voucher. Our flight was only $600 rt. I would check there if you're OK just getting vouchers not full refunds. Also booking.com had tons of hotels with free cancelation.

Yeah we were originally doing one way flights (going into Madrid, flying back from Barca) but then decided to just do round trip and train it back to Madrid. Brought the flight down $400 to $600-700.

With flights, I’ve only seen this work a few times but haven’t done this enough to know if it applies to every airline, but… you can try to go to the airport and book your tickets at the desk of the specific airline you’re considering. Chances are, buying it there will cut out a lot of online fees and stuff like that and should give you somewhat of a discount compared to booking them online.
Also a bit risky but you can wait until the last minute to book flights since they might be cheaper.
