That you can maintain a business oriented conversation while still seeming like a thoughtful, carefully spoken individual. So being ready to answer multiple follow up questions and being pressured on your assertions while not coming off as particularly nervous and still providing substance in your responses.
I was told by my practice partner from bain that you're free to take time to think or jot notes on paper, but it should be a lot more fluid. Instead of putting your head down to brainstorm with a piece of paper, it's a lot more impressive to acknowledge that you need a bit of time while still giving off some initial surface level thoughts and then diving into a structured answer. It can be a fine line to walk between structured answer and rambling for those of us not gifted in eloquent communication, but essentially you should sound naturally structured.
