I love spontaneous chats, it’s one of the big pleasures of NYC. Just don’t be a creep and do read the room. Imo if there are significant vibes I’d prefer if someone asked me to grab coffee somewhere walkable right then and there, or meet at a known place/known time (vs asking for my number in the grocery store)
M here, I would be fine with that. You're just being friendly there is nothing wrong with that. In college, a F asked me out to coffee and I said "I have a girlfriend." I completely regret that decision. I blew an opportunity for an additional friend / potential future love interest. Good luck and remember you deserve to be happy

I had to read “somebody attractive of the gender you date” like three times. I hope you’re not that robotic when speaking, or it’s going to be difficult for you wherever you meet someone. To be more helpful, acknowledge social cues and be mindful of scenarios and pacing. Don’t tap the shoulder of somebody attractive of the gender you date if they’re wearing AirPods, moving quickly, or giving a “don’t you dare” vibe. It might help to have a real question that prods beyond yes/no queued up. Otherwise, worst-case scenario is you’re completely blown off. And you get used to that in NYC.
Just try. A lot depends on the other party too. Missed opportunity for sure if you don’t try
