How difficult is it to get back to consulting again if you move to end user?

I am interested in who gets say in your product prioritisation? We are using RICE scores at the moment, but certain depts feel that they should have a say on priority.
We have teams that work on POCs, before they become problems on the backlog-this seems so backwards?
They say the POC should feed into our product thinking and help shape the solutions we come up with.

Surely the POC should be shaped with the problem in mind-not just what is cool data fun they can build?

First year in a litigation group stuck on a case where all they give me is data entry work all day (updating charts, excel sheets, etc). This work doesn’t seem to have any relevance to litigation skills whatsoever, and because this case is so much work (and the partner is territorial), it’s all I do all day, every day, even weekends. I wouldn’t mind the hours I was building relevant skills, but this is work the client’s HR dept should be doing. It’s frustrating and insulting. What should I do?
