I would approach it by letting your manager know that you’re glad that your colleague is making a descent wage and that you’d like to understand the salary range your title falls under given your experience, and time at the company given the disparity in pay.
You trained them to take your job, what job did you take?
Demand a raise commensurate with your level, experience, and worth to the company. Or walk.
Start interviewing elsewhere. When you get offers, take it.
This includes internally for a higher level and pay
If it’s somehow in your control you can also consider to push more responsibility and workload in that person’s direction.

So is the new position comparable to what you were doing before? Have you taken on new and more complex responsibilities?
This happens all the time. Some people are just better at negotiating or its based on their previous experience. If your new position comes with more responsibility, you should be able to address it with your direct manager. Hopefully if this is the case, they are already aware and have a plan. Usually we make adjustments around performance appraisal time.
I just went through that - my last day is Friday. I got a job with a 28% increase in salary and more responsibility. I asked for money and they couldn't do it. Good luck.

That’s fuxxing sucks but it’s not much you can do really. Think of what it is you want from them? Like what outcome are you hoping for by making a complaint? Figure that out, Get your thoughts together then speak with someone.
