Ghanaian Fried Chicken, Shito Fried Rice, and Kofi Brokeman (Roasted Plantains)

Ghanaian Fried Chicken and Shito Fried Rice with Kofi Broke Man was the first meal I ever ate in Ghana. After a 48 hour flight I was famished. All the cafeterias were closed so I walked down the short road to the chop house just outside the University of Ghana.

I was greeted by every person I passed. “Good Afternoon. How are you? How is your family? Where are you from?”. I later learned greeting people whether stranger or not is common courtesy.

I finally made it to the chop house called “Don’t mind your wife” which seems to be a common name for chop houses throughout Ghana. The chop house is the best place to eat because it is cheap, you have a family style meal, and you meet a lot of locals. It’s not only a place to eat but where you find the latest news about everyone and everything.

They brought me a plate of fried chicken and fried rice. The fried chicken was flavorful, spicy with lots of ginger and fried rice was absolutely delicious. I wanted to eat an entire pot of the stuff. On the side, were the sweetest roasted plantains called Kofi Brokeman. Ghanaians like to snack on plantains and peanuts at night. You see women selling this everywhere with their makeshift fires, grills and sizzling pans with palm oil.

I’ve recreated this dish for dinner. I made a purée of onions, garlic, ginger, habanero pepper. The chicken was simmered in this purée along African seasoning and spices like Maggi and Hwentia (Grains of Selim). I then air fried until the chicken was crispy and Golden brown. Fried rice is like Chinese fried rice but added Shito which is a dried shrimp and chili pepper Ghanaian condiment. The addition of Shito brings your average fried rice to the next level with a bit of spice and umami. The plantains were unseasoned and air fried until they were caramelized. The sweetness of the plantains is a perfect compliment to the spice of the chicken and fried rice.

I nailed this dish. It brought tears to my eyes. The taste is exactly how I remembered at the chop house. One bite and all my memories of Ghana came flooding back in.
