If there is a watch you really want, buying a substitute will not scratch the itch.
They’re both great watches, and nothing wrong with owning both, but if you buy a Seamaster as a placeholder for a Submariner, you’re going to be disappointed.
If you want a sub then the omega won’t cut it. I would get a speed master and wait for the sub. That way you get to enjoy a watch that is unique and different than the sub which could take a while to acquire.

I should add, I’ve got a Seamaster 300m diver and a Speedmaster already, this would be adding to collection

I wouldn’t get the watch you posted at all then. Get something totally different because it adds nothing to your collection. Not sure what dial color your 300m is, but the Speedy and the Sub will both have you covered with black dials. I’d honestly go with a nice dress watch, like an IWC Portuguese, JLC Reverso, or Cartier. Or even an Aqua Terra if you’re really set on staying with Omega. No matter what I would recommend white/silver dials to add variety.

Seamaster 300m is a white dial, also have a decent Dress Watch and Field Watch. I think the Seamaster would only be a substitute for the Submariner, so it’s probably best to wait
Wait for sub and don’t settle. You will regret not waiting.
