I could easily spend a week in Paris but London or Amsterdam are close via high speed train. Both are amazing cities. Cannot comment on Brussels
Try to get to Brugges which is very accessible by train- a good getaway from city, try a few outlying cities in France- spa or Boudreaux region. St. Malo and Mont st. Michele are other interesting beach getaways from Paris.
Brussels is ok, wouldn’t be top of my list for the places you can get to.
I agree with all of M1’s suggestions and you could also tack on Normandy beaches if you like history if going the St Malo / Mont St Michele route
I think 5 days is good in Paris so if you have a full 7 you could def do a trip

Do a day trip to Reims (champagne capital). If you have never been to Paris stay there. Amsterdam and London are great. Wouldn’t do Brussels or Bruge over just staying...

@OP you might run into a lot of things being closed last week of Dec, actually. I think Amsterdam might be your best best. London is incredible but I don’t think you have enough time to do it justice

Maybe consider a side trip to Strasbourg to see their Christmas markets since you’ll be there in December. Gorgeous and the high speed train takes about 2.5-3 hrs one way
