Stay at Macq01 or the Henry Jones Art Hotel in Hobart. HJ's has an incredible gourmet restaurant downstairs. Get the ferry and spend a full day at MONA, the awesome, weird art museum (it's an art museum for people not into art museums...trust me). Get lunch at the restaurant inside the gallery. Do the gin tasting at Institut Polaire, or whiskey at Lark Distillery. Get up early for brunch at Small Fry, it's KNOCK OUT good but limited seating, and popular.
If you are considering going mid year, time your visit and do some of the Dark Mofo Festival.
Head down to Bruny Island for hiking and to see wallabies hopping around.
Are you me? I just got back from Tasmania and was there just under a week. It's kind of like a mini New Zealand. Lots to do and definitely rent a car. Here's what we did:
Hobart (Mount Wellington, Daci and Daci, Frank, Franklin, Whole Pigeon Cafe, MONA, tons of other places to eat and see. If you're there Saturday, go to Salamanca Market. NYT and a few other papers have some other restaurant recs. A lot of fancier places only open Wednesday to Sunday)
Tasman Peninsula / Port Arthur
Freycinet National Park (stayed at Freycinet Lodge, highly recommended; Wineglass Bay lookout and beach, Honeymoon Bay, Cape Tourville lookout, Sleepy Bay)
Bay of Fires / Binalong Bay
Launceston (Cataract Gorge, Saturday market)
Crater Mountain (Dove lake circuit track)
We did not have an aggressive itinerary as we were traveling with a 10 month old baby and didn't want to spend too much time in the car. This also meant we cut out going to wineries and distilleries. We also chose Port Arthur over Bonorong wildlife sanctuary because we figured a toddler would be more into wildlife than a jail (we have family in Australia so will be going back). Alas, no time for Bruny Island this trip. Next time!

Was there just about a year ago and loved it. Stayed in Hobart for 3 nights in a cute Airbnb near Cascade Brewing. Cute wallabies come out at dusk. Free walking tour was nice. Devil Unzoo was nice. Hiking is a must. Drive up to Mount Wellington on a clear day for gorgeous views. I think it rains frequently so be prepared. Really loved it and would love to live there.
