Hotels around the Vendome area are all beautiful but pretty expensive. Usually book the Park Hyatt on points or the BW (it’s named something different) near the river for cash. George V or the Ritz (not Ritz Carlton) are the premier boutique hotels.
What’s your budget?
Paris has a flagship hotel for almost every chain and you can divide hotels into 2 groups: luxury (Park Hyatt, Ritz Carlton, etc) and ultra-luxe (Four Seasons (George V), Cheval Blanc, Rosewood Le Crillon, etc).
As a heads up / warning, prices have gone absolutely insane during COVID - expect to pay $1.5-$2k a night for any of the ultra-luxe places and $1-$1.5k for any of the luxury places. Pre-pandemic prices were about half of that, but those rates have been constant for almost 1.5 years now and they keep selling out / are expected to stay stable for at least the next year.

What’s your price range? Plaza Athena and Four Seasons Jean George are very beautiful, but very pricey. I stayed at Renaissance Noble Eiffel Tower (16th arrondissement, great location) and loved the garden restaurant next door called La Maison Russe, it was wow (you forgot you’re in the middle of a busy city).
Also why does the hotel have to be pretty? I’d focus on location, comfort and quality. You’re not going to spend too much time in the hotel, and you can always book brunch/dinner or drinks at the fancy ones like Athena and Four Seasons (nice live music at brunch).
