My dinner tonight: (solo/busy work day/easy);
Cold rotisserie chicken with sriracha Mayo dipping sauce
Olives and red peppers
Cheese
Cottage cheese
Blueberries & raspberries with whipped cream (from spray can lol)
Square of 90% Lindt dark chocolate

Some sort of bowl- Mexican or Asian inspired rice bowls can be easy to make or a pasta based bowl for an Italian style. My favorite is a burrito bowl (think at home chipotle) and super customizable

I try to do a mix of cooking and pre-prepared meals. Usually a protein and side which could be a starch or veggie. Think grilling marinated meat from Trader Joe’s and a bagged salad kit.
Tonight is Korean bbq marinated beef strips that I’ll grill and the Trader Joe’s frozen veggie fried rice.

Just had brown rice (from last night) with steamed broccoli and eggs, mixed up in a pan with a small amount of oil, liquid aminos, and hot sauce—sort of a healthy fried rice (I’m vegetarian).

I second everyone saying bowls, if you make extra rice / veggies / beans / protein then it’s easy for leftovers. I also love the pre-seasoned frozen salmon options that you can just throw in the oven & bake then put together a salad.
Sheet pan dinners are also great! Google them and you’ll find a ton of easy recipes.
My final favorite thing for really quick and healthy dinners are the Kevin’s brand of paleo chicken & sides. They’re really healthy, tasty and ready in like 5 minutes. I’ve found them at Sprouts, target, Costco and sometimes Safeway
