For crust use 1 cup of flour, one stick of really cold butter, tiny bit of cold water, egg and sprinkle of salt.
As for quiche fillings, I like to add caramelized onions- sautéed until deep brown before adding into quiche. My favorites to go with the onions would be ham, broccoli and cheddar cheese all together. Don’t forget to season egg mixture as well! Add your salt, pepper, parsley, little bit of heat if desired and anything else that goes well with your fillings!

Options, not necessarily all together: 1) use crust. 2) add ham or bacon. 3) diced red bell. 4) basil. 5) halved cherry tomatoes (to let the steam escape). 6) goat cheese pieces.
Jennifer Segal has a series of fantastic recipes for quiche. I make these all the time and they are so delicious. Leek and Parmesan here (I sometimes swap for caramelized onion and goat cheese), and she also has variations for classic Lorraine/spinach/broccoli quiches on her site. Frozen crust listed in recipe for convenience, but I do homemade basic shortening pie crust often.

Adding carmelized onions to your quiche is a game changer!
Crust makes it a quiche. Without crust you basically have a frittata. Frittatas don’t have to be boring though! Agree that caramelized onions are great. Sundried tomatoes and goat cheese also add a ton of flavor. Try playing with different herbs. Also I like to sprinkle some extra cheese on top and broil for a couple minutes to get a little crust on top. I’ve also made a sweet version with baked apples, cinnamon and walnuts, which kind of mimics French toast (I’m trying to avoid gluten so I have to experiment lol).
