Did this person ask for a raise (or deserve one) in the last 2-4 months? Did you go back to the office? Did management change? Did you call them and ask them to work while on vacation? Did you take away their birthday? People leave managers, rarely jobs that pay competitively.

With you on how to onboard someone while remote. I had 10 people start a 14 month project in June 2020. I had calls twice a week with each of them (yes, it was awesome), until we dropped to once a week six months in. We usually just talked about sports or home repairs or kids, and a bit about work and how they were doing (good and bad). It wasn’t perfect, but a few refused better paying roles to finish out the project (where I encouraged them to take the money).
Re this employee. Hard to have enough time to feel the team after a month, but it’s possible. They took the money with nothing else to go on I would guess. Not even a red flag for them or you. Tech or sales?
If it’s a one off and Ubisoft isn’t trying to undermine your firm with the poach, I would take it as a learning experience and talk with your team to make sure they are being taken care of. You don’t have to match competitive pay as long as it’s a fair and equitable, you value each of your team members and your team is comfortable in their day to day lives not worrying about if rent or bills will be paid. (A good way to assist with retaining would be stipends to help adjust pay with out affecting the base) Don’t let this one poaching affect moral. If you are confident you are providing all you and your company can for your team, use this as a learning experience and talk with your team to make sure they feel heard (unions are also a option to explore with your team, Microsoft just agreed to fair company union drives, that may also be another reason they were exploring that option)
I appreciate your comment to ensure that “everyone is comfortable” . I have one on ones with all staff so I am going to reach out during those meetings to extend and confirm that they are all good . Stipends are a good thought , I will find out more about that too.
He was probably talking to Ubisoft in parallel and got the offer when he joined you
