Paris as an adult could be a great experience. I also recommend Copenhagen if you can find a cheap flight. Or maybe a train out to Germany? Luxembourg is also very overlooked - I spent some time there a couple of years ago

Paris could be good since it is an easy train ride! And probably different as an adult than as a kid. Could also rent a car in Paris and drive to other parts of France like Reims (champagne) or Normandy (beaches, WWII history), or travel to the south as you mentioned! Otherwise you could do a train to Germany or exploring other parts of the Netherlands (if you didn’t go during your exchange?)
