100% ask for it to be put in writing.
Definitely bring it up and don't sign the offer until that's in there.
Not a stupid question, your gut is right about this one. Ask for a revised offer that includes the increased salary after the probationary period. Everything in writing is the number one way to not get screwed.
You should ask for a more specific contract. They might feign ignorance one day about the offer. Don't sign it yet, otherwise, it would be binding on your part.
Thank you all for these advices. It really meant a lot.
I raised this issue with HR and they replied that since this is a conditional term, hence it can only be on the offer letter which is still binding and the company will honour it.
My question is that, “Is the offer letter legally binding?”
Although I feel much more reassured, I want to ask for second opinion if this is true and enough so I can finally sign with zero doubts.
You can always ask for that to be put in writing.
