To answer your question, as an industry SME/SA, I’d recommend:
Admin Cert
App Builder Cert
Service Cloud consultant cert (or at least master the underlying content)
And do all the Health Cloud Trailhead trails

Salesforce Certified Administrator. This is the foundational cert - attain it by focusing on training in Trailhead. Focus on the Admin - Beginner path, then intermediate, then advanced.
Core knowledge of the platform is critical for an architect, otherwise you are reliant upon your consulting partners until someone in your organization becomes an expert.
OmniStudio cert is great but it’s just one set of tools that sits on a massive platform. Google the “Salesforce CTA pyramid” which will show you the various certs associated with the System Architect and Application Architect designations.
Go to a team that has access to health cloud accreditation
OP - can you clarify if you are changing roles within the same organization or are going to a different company? If you focused on OmniStudio first I have to imagine it’s because you are going through digital transformation at your company? My assumption is you are looking for the best way to get comfortable in your new tech stack
The goal is pivoting from a Pega SA / Healthcare role to an SFDC SA / Health Cloud role while minimizing impact on job level.

I would recommend sharing and visibility designer. Sharing screws over a lot of SAs.

Who can see what records. If you get a client with a least restrictive visibility model then it’s a delicate art to handle granting visibility/accessibility to data with tools like roles, sharing rules, apex/flow, and manual sharing. If you get it wrong from the get go it’s a painfully buggy experience.
