Not sure how fancy you want to go but if you’re feeling something casual you can set up a cute taco bar and also make rice and beans as sides - you can also make diff proteins for the tacos (shrimp,chicken,steak) if you want yo add variety! Served with margs and/or fruit water (agua frescas) you can’t go wrong :)

If you’re just operating with a toaster oven, I’d go with salmon and veggies. Simple and shouldn’t be too hard with the limitations

Another option is to do salmon or shrimp on the toaster oven. Just add some olive oil, salt, and pepper.
I would also recommend an easy salad. I love arugula with tomato and goat cheese and basamic

Oh man that looks good! I am going to try it.
What are you feeling? I have a great butternut squash and mushroom lasagna or a bolognese recipe or some enchiladas.
Something easier to make - my large oven and gas stove are sadly out of commission due to my apt building figuring out a gas leak, so I have a large toaster oven and an electric stove to use ☺️ for like love to know the lasagna recipe!

If you are feeling bold… Get a sous vide! No gas or stove required! I have the joule and you can cook the world’s best salmon in a pot of water on the counter with just some zip lock bags. Add some oil, salt, lemon zest, and dill to the bags, and cook to 133 degrees. It’s amazing! Impossible to overcook.

Texmex is always our go to. Chicken enchiladas with elotes and beans as sides. Chips and guac as appetizers, margs for drinks and sopapilla cheesecake bars for dessert

I’m a steak with mushrooms caramelized onions on top, wedge potatoe fries, and a side garden/Ceaser side salad type of girl. Have you thought of how many courses you’ll be doing?
A couple fun things to do is go with a theme like an Italian theme night where your appetizers, soups salads main, desserts all align with a theme. Or another fun thing I’ve done is order out from a restaurant (with w.e theme you’re doing) and order a few small safe dishes and a few small”adventurous” dishes then created a TASTING type of night. I personally prefer the tastings because you don’t spend time cooking and if someone doesn’t like its not you and your skills it’s the restaurant/dish. I did that with Japanese food and it was great actually was able to discover new foods I now enjoy regularly.
Look up Sara Haven on Instagram. I made her spinach & parm mac n cheese tonight for a group of friends and they all loved it! It’s a one pot kinda dish
Do homemade sushi and spring rolls!! No cooking required and it’s totally impressive. I’d probably make my life easier and get some apps from an Asian restaurant to supplement 😅
Personally I’d recommend doing a big arugula salad with shaved parm / pine nuts / homemade dressing, pesto orzo with tomatoes or zucchini (can make ahead and just toss the orzo in) and use the toaster over for some baked parm - easy and you won’t stress about any component while they’re over!
Crockpot cranberry meatballs for appetizers. Easies thing and super delicious. 2 bags of frozen meatballs, 2 bottles of chili sauce, 2 cans of jellied cranberry sauce. Run on high for 2 hours or low for 6.

Yeah, def take advantage of the crock pot. SO many delicious dishes you can make- and they are leave alone until the party! Crock pot stuff always turns out perfect, too!
One of my favorite summer salads is watermelon, arugula, red onion, blue cheese or feta crumbles, and balsamic vinegar. You’ll want to let the watermelon soak in the vinegar for ~10 min before serving
