My advice: don't push them too hard. You'll notice if they're pleased or they are not in their voice tone, their words, their facial expressions (in case you're looking at them). Trust your work. This question makes me assume you're very good and motivated. I'd hire you ;)
Most customers wouldn't know how to put into words what they liked/didn't like. Usually all they can tell us is how the service felt to them, which can often be read through their body language. I wouldn't suggest putting pressure on customers, but offering an anonymous multiple choice survey they have the option to fill out should be helpful.
