I believe there’s an option to not send any notifications out when you make updates. I thought about open to work but am always fearful my company will see it.

That’s correct. In settings you can make it so that your connections aren’t notified when you make profile updates. Personally I think applying for jobs on LinkedIn is a complete waste of time. Use it to identify companies that are recruiting and then use your connections to contact someone there.
1. Turn off settings that allows your network to see your update
2. Make incremental changes to your LinkedIn profile instead of all the changes in one go
3. Don't follow new companies
4. Don't send invites to recruiters
4 (modified). Rather than reaching out to recruiters (HR), reach out to hiring managers (the team leaders/managers whose team you will join).
LinkedIn will not show the people at your organization but there is no guarantee on that. I recommend connecting with other recruiters from the organization you really look for an opportunity.
I won’t recommend the risk to update your profile as long LinkedIn notifications set to notify the recruiters. If you like to work for a company, just look for that recruiter and DM them.
I have my setting as open to opportunities & positioned it as talking to recruiters who have details on our competitors 🤷🏼♀️
LinkedIn has an option to show open to work only to recruiters. You can go ahead with that
