How do I “professionally” tell my principal that she’s mean and I don’t like the way she talks to people? Or should I just email her superintendent?

This is tough. I think you can only talk to her about how she approaches you. For instance, "I do not like when you speak to me like that." Perhaps you can give her an example. Another way might be to say, "I am sure you don't realize it, but when you speak to me with that tone, it comes across as mean. I can't focus on what you are asking me to do because of it." Definitely keep the focus on your relationship with her. Keep it to a few really concrete examples of times you’ve felt uncomfortable, and also provide her with some suggestions on ways of communication that help you feel supported and comfortable. If there are times where you feel threatened or you feel the conversation is inappropriate, definitely document and share with HR for guidance.
