How do I write about my strategy consulting experience on a resume? I feel like all the the decisions I ended up making were theoretical - sure the client agreed but it was all ‘projected’ impact. Anyone have any tips for how to sell myself in the best way (for MBA apps)?

Remove the word “projected” ;)

Write how you created the business case for them to achieve x,y,z. Did X contribution that saved company $X dollars. Even if your work was at the front end of the project, focus on how the project generates income or saves money for the client down the line. You're not alone - thousands of ex-consultants have similarly sold their experience to attend top MBA programs :)

Service design seems a popular role in consulting in the past year or so, certainly seeing more grads go down this route. Is there much overlap with business analysis? When I’ve worked with service designers the output seems to be another version of a process map, are there other skills and experience needed? I’m wondering how easy a move would be from business analysis to service design...
