Yeah Google Flights and Kayak are great. One downfall about both is that they make you put a departure airport. If you just want the cheapest way to get from say the US to Europe, I would check out Kiwi.com. You can just put a continent and get the absolute cheapest flights that way, including booking separate tickets.

I find Google flights to be ideal. You can set the number of days of your trip, and it will show you a calendar of the cheapest fares for the number of days. You can also continue to filter it down - it also has a fare calendar for the day you choose and then the cheapest round trip flight based on return date (so essentially if you pick a date then adjust the number of days, what’s cheapest).

This isn’t what OP is looking for, but I also Scott’s Cheap Flights. You can’t enter a destination. It shows you whatever destinations have deals, with a somewhat adjustable timeframe that’s usually a few months to a year in the future.
Do you recommend the paid subscription or is basic worth it?

Skyscanner is the best for sure. You can also search to everywhere and it shows you good vacation ideas

The other options I would be manually playing with the dates to find the cheapest flights
