I worked at a startup that was "really fun and casual", which manifested as sloppy drunkenness at events, people racing matchbox cars in meetings, and general dearth of professionalism. I wished I'd paid attention to the chaos and frat house vibe during the interview process.

Depends. Does everyone have an assigned desk? Do people actually come into the office frequently? Is it just messy, or would it also affect your day to day when you’re trying to get work done (ex: noisy) ? I would only be bothered if it’s not an environment I would like to work in based on the questions above.
If it’s a low travel job, that stuff matters. You’ll be there 40+ hrs per week
